Cinnamon Toast Crunch Bars are similar to Rice Krispie bars! They’re made by coating Cinnamon Toast Crunch cereal in a gooey marshmallow mixture, sweetened with vanilla.

The mixture is topped with white chocolate and crushed cereal, chilled in the fridge, and sliced into squares.

  • Mini Marshmallows- The key to this bar, they hold everything together. I use mini marshmallows because they melt quickly, but any size of marshmallow will work.
  • Cinnamon Toast Crunch Cereal- Cinnamon sugar flavoured cereal.
  • Unsalted Butter- Plant-based butter also works.
  • Vanilla Extract- For flavour.
  • A pinch of salt- To balance the sweetness.

How to Make Cinnamon Toast Crunch Bar

Melt the butter over medium-low heat. Add the marshmallows and mix until melted.

Remove from the heat and add the vanilla and salt. Add the cereal and mix quickly to coat.

Transfer to a prepared 9×9 baking dish and press the mixture down with the back of a greased spoon.

Erika’s Cinnamon Toast Crunch Bar Tips

  • Work quickly when mixing. As the marshmallows cool, the mixture will start hardening.
  • Speaking of working quickly, have all of your ingredients measured and ready to go before beginning.
  • Use medium-low heat. We’re only melting the butter and marshmallows. Be careful not to burn them.
  • Grease the back of a spoon to press the mixture into the baking dish to prevent sticking.

Ingredients
  

  • 5 tablespoons butter 70 grams
  • 1 bag mini marshmallows 400 grams
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 5 cups Cinnamon Toast Crunch 205 grams, plus more crushed for topping
  • 1/2 cup white chocolate chips melted

Equipment

  • 1 large pot
  • 1 heat-proof silicone spatula
  • 1 9×9 baking dish

Method
 

  1. Line a 7×7 baking dish with parchment or grease with butter.
  2. Melt the butter over medium-low heat. Add the marshmallows and mix continously until melted.
  3. Remove from the heat and add the vanilla and a pinch of salt.
  4. Add the Cinnamon Toast Crunch and mix well. To prevent hardening, work quickly and transfer the mixture to the prepared baking dish. Press the mixture down with the back of a greased spoon.
  5. Drizzle the bar with the melted white chocolate and sprinkle with crushed cereal.
  6. Chill in the fridge for 30 minutes to an hour, then cut into 16 pieces.
