Hot Honey Mustard Sauce

Sweet, tangy, a little spicy, and exactly the kind of sauce that makes you keep dipping “just one more time.” This hot honey mustard is the sauce I built specifically for crispy chicken, especially my cornflake chicken strips over on Piper Cooks. It hits all the right notes: creamy from the mayo, sharp from the mustard, sweet from the honey, and a clean heat from the hot sauce.

  • Mayonnaise: This is your base. It makes everything creamy and helps the sauce cling to crispy chicken.
  • Honey: Brings sweetness and that classic honey mustard flavor. Use a mild, runny honey.
  • Mustard: I don’t use just one. I mix: Dijon for sharpness, Sweet mustard for balance, Stone ground for texture. This combo gives way more depth than using just one type.
  • Hot sauce: I use Valentina Hot Sauce. It’s mild, slightly tangy, and doesn’t overpower the sauce.
  • Salt + black pepper: Just enough to bring everything together.

Ingredients

  • ½ cup mayonnaise
  • ¼ cup honey
  • 3 tablespoons mustard mix of Dijon, sweet, and stone ground
  • 2 tablespoons Valentina hot sauce or your favorite
  • Pinch salt
  • Pinch black pepper

Method

  1. Whisk everything together until smooth.
  2. Taste and adjust seasoning.

Notes

Mustard matters: Use a mix for the best flavor. I like 1 tablespoon each of Dijon, sweet mustard, and stone ground. If you only have one, Dijon is your best option but the flavor will be sharper and less balanced.
Hot sauce choice: I use Valentina Hot Sauce because it’s mild and tangy.
Flavor develops over time: This tastes even better after sitting for 30 minutes in the fridge.
Yield: Makes about a cup! 8 servings of about 2 tablespoons each.
