Chopped Avocado Caesar Sandwich

This Chopped Avocado Caesar Sandwich is a quick, creamy, and crunchy sandwich made with romaine lettuce, avocado, Caesar dressing, and freshly grated Parmesan tossed together and piled onto garlic-rubbed toasted bread. It’s a fast lunch or light dinner that tastes like a Caesar salad in sandwich form and comes together in about 10 minutes.

Ingredients
  

  • 1 cup romaine lettuce chopped
  • ½ avocado roughly chopped
  • 2 tablespoons Caesar dressing
  • 1 tablespoons freshly grated Parmesan cheese
  • 2 slices bread
  • 1 teaspoon extra virgin olive oil
  • 1 clove garlic
  • salt and pepper to taste

Method
 

  1. Add the chopped romaine lettuce, avocado, Caesar dressing, and Parmesan cheese to a bowl.
  2. Toss everything together until evenly coated. Season with salt and pepper to taste.
  3. Drizzle both slices of bread with olive oil. Toast in a grill pan over medium heat until golden and crisp.
  4. Rub the warm toasted bread with the garlic clove.
  5. Spoon the chopped Caesar mixture onto one slice of bread and top with the second slice.
  6. Slice and serve immediately.

Notes

Use a ripe avocado that gives slightly when pressed, so it mixes easily with the lettuce and dressing.
Start with about 2 tablespoons of Caesar dressing and add more if needed. Too much can make the sandwich messy.
Toast the bread until it’s crisp so it doesn’t get soggy.
Best eaten right after assembling, while the toast is still crunchy.
Optional add-ins: grilled chicken, crispy bacon, or sliced tomato.
