Truffle Mayonnaise Recipe From Scratch

This truffle mayo is quick, bold, and easy to make with six ingredients in under a minute. Use it on fries, burgers, or roasted veggies to add bold, earthy flavor to your favorite foods.

Ingredients
  

  • 1 large egg
  • 1 tablespoon white truffle oil
  • 1 teaspoon apple cider vinegar or lemon juice
  • 1 teaspoon Dijon mustard
  • 1 cup neutral oil such as canola or light olive oil
  • 1 pinch salt
  • 1 pinch pepper

Equipment

  • Immersion Blender

Method
 

  1. Add all ingredients to a tall container that fits your immersion blender.
  2. Place the blender at the bottom of the container and turn it on.
  3. Blend for a few seconds without moving, then slowly lift the blender as the mayo thickens. This should take 20 to 30 seconds.
  4. Taste and season with more salt and pepper if needed.
  5. Transfer to a jar and refrigerate. Use the same best-before date as the egg you used.
