Ingredients

  • 3-4 medium red potatoes approx. 600g. Diced into 1/2 inch cubes.
  • 1 tablespoon neutral oil
  • 3/4 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 340 grams ground beef or Beyond Beef
  • 3/4 cups cheddar cheese shredded
  • lettuce shredded
  • tomato diced
  • onion diced
  • pickles chopped
Big Mac sauce
  • 3 tablespoons mayo
  • 1 tablespoon ketchup
  • 1 teaspoon yellow mustard
  • 1 teaspoons pickle diced
  • 1 teaspoon onion diced
  • 1 teaspoon pickle juice
  • splash of vinegar
  • pinch of sugar
  • pinch of salt

Equipment

  • 9x9 baking dish
  • large mixing bowl

Method

  1. Preheat the oven to 400°F (205°C).
  2. In a large bowl, toss the potatoes, oil, and seasonings. Place in a 9x9 baking dish and cover with foil. Bake for 25-30 minutes, until fork-tender.
  3. Meanwhile, cook the beef in a frying pan until cooked through. Drain any extra grease if needed. You won't need to do this with Beyond Beef. Set aside.
  4. Whisk the sauce ingredients together and set aside.
  5. Once the potatoes are fork-tender, top with the beef and cheese. Bake for 5 minutes until melty.
  6. Drizzle the casserole with the sauce and top with lettuce, tomato, onion, and pickle.

Notes

If using ground beef, drain it well before adding it to avoid a greasy casserole.
If you're in a pinch, try Thousand Island dressing.
If you anticipate you'll have leftovers, add the fresh toppings to each serving instead of the whole dish. No one wants soggy leftovers!
